After 2 days of the meat mixture marrying with spices in my fridge, I rolled it out in square logs (easier for me to form) and put it in the oven for 9 hours. I was very worried when I finally pulled it out of the oven, as is didn't cut like pepperoni. It tasted great though!
I put one log in the fridge and the other 4 in the freezer (the recipe says to use within one week or freeze it). Thankfully, the cold did the trick of being able to slice the pepperoni thin!
My verdict: While the pepperoni tastes great, it doesn't have tons of that "pepperoni" flavor. There are not enough spices in it. I'm perfectly happy (as is the whole family) to eat up the rest of the it though... and I do love knowing exactly what is in this pepperoni... down to the cow.
Next time I need to make it, I will be trying Tammy's Recipe for Spicy Pepperoni. It looks like it has all the spices I thought the Beef Pepperoni was missing (though I'll be omitting the crushed red pepper... we are wimps). I'd encourage others wanting to make pepperoni to try the Spicy recipe over the Beef one and just tweak it to their tastes.
And as a side note, if you are needing new recipes, I love Tammy's Recipes! She has around 12 recipes that are a staple at my house!
